- 1 lb potatoes
- 1 lb yams or sweet potatoes
- 3 large fresh beets
- Olive Oil
- Holy Trinity Grill Rub
Preheat oven to 425F. Wash vegetables and cut into 1 1/2″ bite size pieces. Put vegetables into a large bowl and drizzle olive oil on them. Sprinkle Holy Trinity Grill Rub to taste. Toss to coat. Spread veggies in a single layer in a large pan and roast for 45 minutes (or til done).
