- 4 Boneless chicken breast halves, with skin
- 4 ounces goat cheese, mixed with 2 tsp fresh rosemary*
- 1/4 cup melted butter
- 4 ounces Santa Fe Seasons Red Chile Jelly, melted
Preheat oven to 375F. Gently loosen skin to open a pocket large enough for 1 ounce of cheese mixture. Be careful not to tear the skin or surrounding membrane. using a spoon, stuff the cheese under the skin of each breast.
Place breasts in a baking dish skin side up. Pour melted butter oven the chicken. Bake for 15 minutes. Remove from oven and pour melted jelly over the breasts. Return to oven and bake for 15 minutes or until springy to te touch. Spoon the sauce over each breast before serving.
Serves 4
*Rosemary can be optional or try 1/2 tsp Black Pepper.
