Mexican Shrimp Cocktail

  • 2 pounds cooked shrimp, peeled and de-veined (save broth)
  • 1 tablespoon crushed garlic
  • ½ cup finely chopped red onion
  • ¼ cup fresh cilantro, chopped
  • 1 cups Santa Fe Mixes Bloody Mary Mix
  • ½ cup shrimp broth
  • ¼ cup ketchup
  • ¼ cup fresh lime juice
  • 1 teaspoon Santa Fe Chile Co. Red Chile Hot Sauce
  • salt to taste
  • 1 ripe avocado – peeled, pitted and chopped
  • ½ cucumber – peeled and chopped

Place the shrimp in a large bowl. Stir garlic, red onion, and cilantro. Mix in Santa Fe Mixes Bloody Mary Mix and broth, ketchup, lime juice and Santa Fe Chile Co. Red Chile Hot Sauce. Season with salt. Gently stir in avocado and cucumber. Serve lukewarm in one large bowl, or ladle into individual bowls. Garnish with celery stock or cilantro sprig.
