Cooking Method: Stovetop stir-fry

Ingredients

  • 2 tablespoons peanut oil, divided
  • 2 boneless, skinless chicken breasts, diced
  • 1 can (8 ounces) sliced water chestnuts, drained
  • 1 can (8 ounces) diced bamboo shoots, drained
  • 1/4 pound snow peas
  • 1 small red bell pepper, sliced
  • 2 tablespoons Santa Fe Seasons Red Chile Jelly, plus more to taste
  • Cooked rice, for serving

How to Make Red Chile Chicken Stir Fry

  1. Prepare and measure all the ingredients before heating the wok or skillet.
  2. Heat 1 tablespoon of peanut oil in a wok or large skillet over high heat.
  3. Add the diced chicken and stir-fry until it is completely cooked. Transfer the chicken to a clean plate and set it aside.
  4. Add the remaining tablespoon of peanut oil to the wok.
  5. Add the water chestnuts, bamboo shoots, snow peas and sliced red bell pepper. Stir-fry until the vegetables are hot and crisp-tender.
  6. Return the cooked chicken to the wok with the vegetables.
  7. Add the Red Chile Jelly and stir until it melts and evenly coats the chicken and vegetables.
  8. If the glaze becomes too thick, add a small amount of water and stir until it reaches the desired consistency.
  9. Serve the red chile chicken stir fry immediately over warm rice.

Tips for Making Chicken Stir Fry

Cut the chicken into similarly sized pieces so it cooks evenly. Slice and measure all the vegetables before heating the wok because stir-frying moves quickly once cooking begins.

Keep the wok or skillet hot while cooking, but stir the ingredients frequently to prevent burning. Cook the chicken separately before adding it back to the vegetables so everything maintains the proper texture.

Begin with 2 tablespoons of Red Chile Jelly. Add more if you want a sweeter glaze with additional red chile flavor.

What Does Red Chile Jelly Add to Stir Fry?

Santa Fe Seasons Red Chile Jelly melts into a simple glaze that coats the chicken and vegetables. It provides sweetness, earthy red chile flavor and gentle Southwestern warmth without requiring a separate stir-fry sauce.

You can also use Red Chile Jelly as a glaze for chicken, turkey, shrimp and roasted meats or serve it with cheese and crackers.

What to Serve With Red Chile Chicken Stir Fry

Serve the stir fry over white rice, brown rice or another grain that will absorb the red chile glaze. It also pairs well with roasted vegetables or a simple salad.
