How to Make Holy Chipotle! Orange and Spinach Dressing

    1. Place the Holy Chipotle sauce, olive oil and dried oregano in a small bowl.

    2. Whisk the ingredients together until the dressing is thoroughly combined.

    3. Peel the navel oranges and cut them into slices.

    4. Add the orange slices to the dressing and gently toss until coated.

    5. Let the oranges marinate in the dressing for 20 to 30 minutes.

    6. Arrange the fresh spinach on individual salad plates.

    7. Top the spinach with the marinated orange slices, sliced red onion, Kalamata olives and piñon nuts.

    8. Drizzle the remaining chipotle dressing over each salad and serve.

    Tips for Making the Dressing

Whisk the dressing again immediately before serving because the olive oil may separate while the oranges marinate.

Remove the peel and as much white pith as desired from the oranges before slicing them. Gently toss the slices to help them retain their shape.

The original recipe does not specify quantities for the oranges, spinach, onion, olives or nuts. Adjust those ingredients according to the number and size of salads being prepared.
