Tips for Cooking the Chicken
Chicken breast thickness can affect the cooking time. Thicker pieces may require more than 5 to 6 minutes per side.
Use a food thermometer to check the thickest portion of each chicken breast. The USDA safe-temperature chart specifies 165°F as the safe minimum internal temperature for poultry.
Allow the butter and oil to heat before adding the chicken, but keep the skillet over medium heat so the butter and sauce do not burn.
The recipe uses ⅛ cup sauce and 1 tablespoon sour cream for each chicken breast. Scale those two ingredients according to the number of chicken breasts being prepared.
Piñon Nuts or Brazil Nuts
The original recipe uses the wording “pinion nuts.” This has been corrected to piñon nuts, which are also commonly called pine nuts.
Either piñon nuts or Brazil nuts can be used as the finishing garnish. Chop larger Brazil nuts before sprinkling them over the chicken.
