Holy Chipotle! Chicken Drummies

Holy Chipotle! Chicken Drummies are oven-baked chicken drumettes and wings finished with a buttery, tangy chipotle glaze. The chicken first cooks slowly at 325°F before being tossed with HOLY CHIPOTLE! Marinade & Cooking Sauce and returned to a hotter oven.

Submitted by Tim Foley, this recipe uses three pounds of chicken and makes a flavorful party appetizer, game-day snack or casual dinner.

Ingredients

  • 3 pounds chicken drumettes and/or wings

  • 1/2 stick butter, melted

  • 1/2 cup HOLY CHIPOTLE! Marinade & Cooking Sauce

  • 1/4 teaspoon cornstarch

  • Ranch or blue cheese dressing, for serving

  • Carrot or celery sticks, for serving

How to Make Holy Chipotle! Chicken Drummies

  1. Preheat the oven to 325°F.

  2. Arrange the chicken drumettes and/or wings on a baking sheet.

  3. Bake the chicken at 325°F for 2 hours.

  4. Near the end of the initial baking time, combine the melted butter and Holy Chipotle sauce in a saucepan.

  5. Bring the mixture to a low boil.

  6. Whisk in the cornstarch and continue stirring until the glaze thickens.

  7. Place the cooked chicken in a large bowl.

  8. Pour the chipotle glaze over the chicken and toss until every piece is thoroughly coated.

  9. Increase the oven temperature to 400°F.

  10. Return the coated chicken to the baking sheet.

  11. Bake for another 10 to 15 minutes, or until the glaze has set and the chicken reaches an internal temperature of at least 165°F.

  12. Serve with ranch or blue cheese dressing and carrot or celery sticks.

Are Drumettes the Same as Drumsticks?

Chicken drumettes are the meaty upper sections of chicken wings. They resemble small drumsticks but are part of the wing rather than the leg.

Full-size chicken drumsticks come from the lower portion of the chicken leg and are larger. The original Holy Chipotle! Chicken Drummies recipe specifically calls for drumettes, wings or a combination of the two.

Tips for Baking Chipotle Chicken Drumettes

Arrange the chicken in a single layer so the pieces cook evenly. Use more than one baking sheet if necessary to prevent overcrowding.

Stir the glaze as it comes to a low boil and whisk in the cornstarch thoroughly to prevent clumps.

After coating the chicken, spread the pieces back into a single layer before the final 400°F baking period.

Cooking time alone does not confirm that poultry is safe to eat. Check the thickest pieces with a food thermometer and make sure they have reached at least 165°F without touching the bone.

How Spicy Are the Chicken Drummies?

The current HOLY CHIPOTLE! Marinade & Cooking Sauce is described as mild, tangy and delicate. These chicken drumettes have Southwestern chipotle flavor without being presented as intensely hot.

Serve additional sauce separately for anyone who wants a stronger chipotle flavor.

Storing and Reheating Leftovers

Refrigerate leftover chicken in a shallow, covered container within two hours of cooking. Use refrigerated leftovers within three to four days.

Reheat the chicken thoroughly to an internal temperature of 165°F. An oven or air fryer can help restore the texture of the glaze better than a microwave.
