Holy Chipotle Flamin’ Posole

Holy Chipotle Flamin’ Posole combines tender slow-cooked pork with SANTA FE SEASONS White Corn Posole, onion and garlic.

How to Make Holy Chipotle Flamin’ Posole

  1. Place the pork roast in a covered container with one-half can of Coca-Cola and two tablespoons of HOLY CHIPOTLE! Marinade & Cooking Sauce.

  2. Marinate the pork in the refrigerator for 6 to 8 hours or overnight.

  3. Transfer the pork and marinade to a slow cooker.

  4. Cook on low for 4 to 6 hours. Watch the liquid level and add water when needed.

  5. When the pork is tender enough to shred, remove it from the slow cooker.

  6. Season the cooked pork with salt to taste. Place it in a separate covered container and refrigerate it while the posole cooks.

  7. Add the white corn posole and water to the slow cooker. Cook for 2 hours.

  8. Add the sautéed onion and garlic.

  9. Continue cooking the posole for approximately 4 hours, or until the kernels have fully opened. Do not add salt to the posole before it has opened.

  10. Return the cooked pork to the slow cooker.

  11. Simmer the pork and posole together for approximately 15 minutes, until everything is hot and the flavors have combined.

  12. Garnish with fresh lime and minced garlic if desired, then serve.
